What are the optimal settings for pages of an old book?

I’m trying to digitize a book that was published in 1921. With the automatic settings on my Galaxy Note 5 camera, the pages are coming out as somewhat gray and yellowish, with insufficient contrast with the black letters, making the text somewhat difficult to read.

When I adjust for contrast (setting at 50) in Gimp, the pages are easier to read but rather than do this for each of approximately 140 pages, I thought I might try using the Pro mode to adjust the settings in such a way that the images might not need to be adjusted.

I’m seeking suggestions as to how I might adjust the settings in order to accomplish this. Any guidance would be most appreciated. (I tried including links to samples of the pages mentioned but the system considered this spam, so I removed them.)
